FOODSPELL

Is that spicy Chinese dish Sichuan? Szechwan? Szechuan? An argument can be made for each -- they're transliterations from the characters of a language other than English, and so can be represented in several ways. (Associated Press prefers Sichuan, if that colors your decision.) Choosing one and using it consistently constitutes a style choice. And that's what style is all about -- making choices from among the available options.
