FOODSPELL
Is that spicy Chinese dish Sichuan? Szechwan? Szechuan? An argument can be made for each -- they're transliterations from the characters of a language other than English, and so can be represented in several ways. (Associated Press prefers Sichuan, if that colors your decision.) Choosing one and using it consistently constitutes a style choice. And that's what style is all about -- making choices from among the available options.
FOODSPELL, the Association of Food Journalists' food style book, covers 40 pages, with entries ranging from A.1. steak sauce (note two periods) to zucchini (green and/or yellow squash).
